Loaded Baked Potato

Great as a side dish!

 

4- large potatoes

8 oz sour cream 1 stick salted sweet cream butter (softened)

Bunch of green onions chopped

Rowdy Roots BBQ KC Shake

1 lb. bacon cooked and chopped

1 lb. shredded cheddar cheese

Canola oil spray

Prep

Wash potatoes and let dry.

Spray with olive oil spray and place indirectly on a hot grill.

Cook about 1 hour to 1 ½ hour. Take off grill and let cool.

Cook the bacon and chop.

Cut potatoes in half lengthwise and scoop out the inside and place into a bowl.

Sprinkle KC Shake (As much as you like) over the potatoes then mix in the bacon sour cream, softened butter, onions, and cheese and mix well.

Fill the potato skins with the filling mixture.

Grill/Bake

Place back on the grill or oven at 400+ degrees and cook until the tops are golden brown about 20-30 minutes.

 

Tip: You should place the potatoes on the cold side of the grill. (The side without the fire directly under it.)
