simple-Roasted garlic, compound butter recipe
I use this simple recipe for garlic toast on all of my BBQ sandwiches…
Ingredients
1 lb softened butter
2 whole bulbs of fresh garlic
Extra Virgin Olive Oil
Chop the top off the bulbs of garlic. Place the garlic into a piece of aluminum foil and pour a small amount of olive oil over the top of the garlic. Twist the top of the foil to seal the pouch. Bake in the oven at 400 degrees for 45 minutes. Another method is to place on a hot grill with indirect heat for 45 minutes.
When garlic is done roasting let cool. Then squeeze out the garlic onto a cutting board. Discard the outside skin of the roasted garlic. Chop the garlic pulp so there isn’t large chunks. In a bowl mix the garlic thoroughly into the softened butter. Place a lid on the mixture use that day when it is still soft or refrigerate and use later. Soften butter before use if refrigerated.
