Jalapeno Popper Stuffed Chicken

Chicken thighs boneless 2lbs

Cream cheese 8 oz

Fresh jalapenos 2 chopped

Sliced bacon 2lbs

Rowdy Roots BBQ Rub

KC apple BBQ sauce

Prep

Chop and dice the jalapenos. Leave seeds in if you want more heat.

Soften cream cheese. (Leave at room temperature for a couple hours.)

Tenderize the chicken. Beat on both sides with tenderizer hammer to flatten.

Season the chicken with Rowdy Roots BBQ rub on both sides.

Assembly

Scoop about one tablespoon cheese filling onto the chicken.

Start from one end and roll, then wrap with two slices of bacon to hold them together.

Toothpicks are not necessary but can be used.

Grill

On a hot grill with the fire/coals to one side.

Start placing the chicken on the cold side of the grill. The side without the fire directly under it. Close lid and cook for 45 minutes. Flip them then cook for an additional 45 minutes.

Baste with KC apple BBQ sauce heat on the grill for 5 minutes then take them off and let rest for a couple of minutes then enjoy.

Disclaimer: You do not want to place any food wrapped with bacon directly over the fire because of the risk of fire!
